Chocolate Cranberry Quick-Bread Recipe

Quick-Bread ? Well, now you have; this one is well worth making !!

2 1/4 cups all-purpose flour |
 |
|
1/2 teaspoon salt |
 |
|
1/4 teaspoon baking soda |
 |
|
3 ounces white chocolate, coarsely
chopped or white chocolate chips |
 |
|
1/2 cup (1 stick) butter, softened
|
 |
|
1 cup granulated sugar |
 |
|
3 large eggs, at room temperature
|
 |
|
1/2 cup buttermilk |
 |
|
3 tablespoons orange juice |
 |
|
1 teaspoon grated orange zest
|
 |
|
1 teaspoon vanilla extract |
 |
|
3/4 cup dried cranberries, chopped
|
- Preheat oven to 350°F. Lightly butter 9x5x3-inch loaf
pan. Dust with flour.
- Mix together flour, salt and baking soda.
- Place white chocolate in small microwave-safe bowl.
Microwave on medium (50% power) for 1 minute. Stir. Microwave 30 seconds more
or until it is softened. Stir until smooth and let cool.
- Beat butter in mixing bowl until creamy, using electric
mixer at medium speed. Gradually add sugar, beating until light and fluffy.
Add eggs, one at a time, beating well after each addition
- Add buttermilk and beat until blended. Add cooled
chocolate, orange juice, orange zest and vanilla and mix just until blended.
Stir in flour mixture, mixing just until blended. Stir in cranberries. Turn
mixture into prepared pan.
- Bake for 1 hour 10 minutes or until a toothpick
inserted in center comes out clean. Cool in pan on wire rack for 15 minutes.
Remove from pan and cool completely on rack.
