Banana Fritter

Recipe

Yield: 2 to 4 Servings

You can also make these fritters out of practically any cooked vegetable, such as mashed sweet potato.  

1 Tbs. sugar
1 ripe banana
1 large egg
1 Tbs. all-purpose flour
1 tsp. baking powder
pinch of salt
1/2 tsp. nutmeg
1/2 tsp. vanilla
2 Tbs. vegetable oil

Preparation:
In a medium bowl, mash the banana with a fork. Combine the remaining ingredients, except for the oil, in the bowl. Heat the oil in a large frying pan. Drop the batter by tablespoons into the hot oil. Brown fritters on both sides, as you would pancakes.

Sprinkle powdered sugar over the fritters, if desired, and serve. One banana produces approximately 10 fritters.
