Southwestern Cornbread Recipe

Makes 1, 9x9-inch pan

The combination of buttermilk makes this bread tender and moist. With the addition of more eggs than most recipes, it is also cakelike.
2 cups cornmeal
1 cup flour
6 Tablespoons sugar
1 Tablespoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup oil
1-1/2 cups buttermilk
3 eggs

Preheat oven to 400 degrees. Oil 9 x 9-inch pan.

Mix dry ingredients. In mixer, mix oil, buttermilk, and eggs. Add dry ingredients until just mixed. Place in prepared pan. Bake for 30 minutes.
