Irish Coffee Ice Cream Pie Recipe

Serves 10

This recipe is perfect for the summertime. This is also delicious made with vanilla or chocolate ice cream. I like to top this pie with crushed oreo cookies. Sometimes I place whole cookies around the perimeter of the pie -- just place them flat.
bullet 2 envelopes KNOX Unflavored Gelatin 
bullet 2/3 cup cold water
bullet 2 Tbsp. sugar 
bullet 2 tsp.Instant Coffee
bullet 2 tsp. Irish whiskey (optional)
bullet 1 tsp. vanilla
bullet 1 pint coffee ice cream, softened
bullet 2 cups thawed COOL WHIP FREE Whipped Topping, divided
bullet 1 OREO Pie Crust from the grocery store (6 oz.) or Graham Cracker or Cookie Crust

Sprinkle gelatin over cold water in small saucepan; let stand 1 minute. Stir on low heat until gelatin completely dissolves, about 5 minutes. Stir in sugar and coffee; heat until dissolved. Remove from heat; stir in whiskey and vanilla.

Place ice cream in electric blender or food processor; cover. Process until smooth. While processing, gradually add gelatin mixture through feed cap; process until blended. Pour into large bowl; let stand 2 to 3 minutes or until mixture mounds slightly when dropped from spoon. Gently stir in 1-1/2 cups whipped topping.

Spoon into prepared crust. Refrigerate until firm, at least 2 hours. Top with remaining whipped topping just before serving.
