Pie or Tart Dough Scrap Recipe

Instead of pressing the pie or tart dough scraps back into a ball, simply patch them together.  Use a small amount of water as the glue, moistening the edges where they touch. Re-rolling can toughen the dough.  

CINNAMON-SUGAR PINWHEELS:  Best made with Sweet Dough

Brush patched together dough with melted butter.  Sprinkle with cinnamon sugar, and roll it up in a jelly roll. With each turn of the roll, along each edge, seal it to the bottom by hammering it with the heal of your hand.

Cut into 1/2-inch slices and place, cut side down, on a baking sheet. Bake in a 350 degree preheated oven for 15 to 18 minutes.

CHEESE CRISPS:  Best made with Basic Flaky Pie Dough.

Brush the patched together dough with 1 beaten egg.  Sprinkle with a mixture of grated sharp cheddar cheese and parmesan cheese, mixed with a small amount of cayenne pepper, to taste.  Cut into strips (use a pizza cutter), and place on a baking sheet lined with waxed paper.  Bake in a 350 degree preheated oven for about 10 minutes.
