Pear Coconut Crisp Recipe

Serves 6 - 8

pears Pear Recipe courtesy of Oregon Washington California Pear Bureau
bullet 6 fresh winter pears
bullet 1 cup packed brown sugar, divided
bullet 1 teaspoon grated orange peel
bullet 1/2 teaspoon each ground cinnamon and nutmeg
bullet 1/2 cup flour, divided
bullet 1/4 cup orange juice
bullet 1/4 cup butter or margarine
bullet 1 cup flaked coconut
bullet Cream or half-and-half

Peel, core and slice pears. Toss with 1/2 cup brown sugar, orange peel, cinnamon, nutmeg and 2 tablespoons flour. Place in shallow 2-quart baking dish. Pour orange juice over pears. Combine remaining brown sugar and flour; cut in butter until crumbly. Stir in coconut. Sprinkle over pears. Bake, covered, at 350 F. 40 minutes. Uncover and bake 10 to 20 minutes longer or until pears are tender. Serve warm with cream or half-and-half.
