Cherry Pie Recipe

Makes one 8-inch pie

This is my very favorite cherry pie recipe. This technique can be followed for making any fresh fruit pie -- properly thickening the cornstarch mixture before the recipe is baked. (Precooking also gets rid of a slightly starchy taste that cornstarch will often impart to a recipe. See also Pantry: Thickeners.) This recipe is a perfect candidate for a lattice top.
