Strawberry Compote

Makes 8 servings (about 1 cup)

This can be served this with Homemade Buttermilk Pancakes or Waffles, with or without maple syrup ! I use this compote to make Strawberry Biscuit Shortcakes or a reduced-fat version !!
bullet 2 pints fresh strawberries, diced or 4-cups  thawed frozen strawberries, sliced
bullet 3 tablespoons dark brown sugar

In a medium bowl, toss the strawberries and brown sugar. Cover and refrigerate until the strawberries give off some juices, at least 2 hours or overnight.
