SPRITZ Chocolate-Dipped Cookie Recipe

Makes enough to dip 1 batch Spritz cookies

These cookies will just melt just melt in your mouth ! While the chocolate is not set after dipping, optionally sprinkle with colored sprinkles, finely chopped nuts or colored sugar. Everyone will love them !! 

bullet1 batch baked Spritz Cookies, thoroughly cooled. I use the 'ribbon' die of the Spritz cookie press for this. 
bullet1, 8 oz container of semi-sweet or sweetened chocolate squares, such as Bakers or 1 (12-ounce) package of semisweet chocolate chips. I don't recommend using bittersweet or unsweetened chocolate; you won't like the taste 
bullet1/4 inch of a paraffin wax bar about 3" X 5" 

NOTE: Some older recipes for dipped candy call for melting paraffin with chocolate to make it firmer and give it a nice sheen upon cooling. The label on most paraffin boxes state it is not for human consumption, but it is still used. You can go to a specialty store (candy/cake decorating) to obtain chocolate with added cocoa butter marketed especially for dipping candies. It does not require the addition of paraffin wax, so use it in this recipe instead of the baking chocolate or chocolate chips AND the paraffin.

1. Press Spritz cookie dough with a ribbon die and bake. Thoroughly cool the cookies before dipping.

2. Melt the baking chocolate and the wax, but do NOT try to melt the chocolate and wax together, as it will not work. When both the chocolate and the wax are melted separately, pour the wax into the chocolate slowly, stirring constantly. To do:

bulletMelt the baking chocolate in a 4 cup Pyrex container, covered with a plate, in the microwave for about 2.5 minutes. Stir. If any chunks remain, return to microwave for about another 30 seconds at a time, if necessary. Don't overdo it as chocolate burns easily.
bulletMelt the wax: While you're melting the chocolate in the microwave, put the slice of paraffin in an uncovered container on top of the stove over a very low heat. Do not leave the melting wax. Do not use a high heat. Wax is flammable and if spilled, burns badly. Attend the melting wax at all times. It doesn't take long to melt and when all is melted, remove from heat source. 

When melting chocolate chips with paraffin, you can do the two together. Just melt it with the chocolate in the top of a double boiler over hot water and stir.

3. To dip: Hold a cooled cookie at an angle - from corner to opposite corner - and dip into the melted chocolate/wax mixture. Set aside on a wax paper covered cookie sheet. 

When all dipping is completed put the dipped cookies in the in refrigerator for about 30 minutes to quickly harden the chocolate. These freeze well and can be made weeks ahead of the holidays.
