White Chocolate Pecan Brownies Recipe

Yields 24 to 32

These brownies are such a treat.

1 cup unsalted butter
2/3 pound white chocolate (broken in pieces)
1 cup sugar
1 tablespoon vanilla extract
4 large eggs
2 cups all-purpose flour
1 cup coarsely chopped pecans

Preheat oven to 325 degrees F. Line a 13 x 9 x 2 inch pan, including sides, with foil. Lightly grease foil; set aside.

In a microwave or double boiler, set over low heat, melt butter and chocolate until smooth. Remove from heat and stir in sugar and vanilla.

Beat eggs lightly and add to chocolate mixture. Add flour and nuts; stir until just combined. Pour batter into prepared pan. Bake for 30 to 35 minutes or until a pale golden color.

Remove from oven and cool, in pan, completely on wire cooling rack. Using sides of foil as guide, lift brownies out of pan and peel away foil. Cut into squares.
