Dissolve the sugar in a pan. When it becomes liquid, add the butter and the lemon. Bring to the boil but stir diligently for 15 –20 minutes. The correct consistency is achieved when, if a sample is dropped into very cold water, it hardens. Beat your mixture firmly for 5 minutes; pour onto a buttered tin and when it has cooled, mark it into squares with a knife. When cold it will set hard. Tap the bottom of the tin and it will break up into squares. |
