Robert's Wife's Mother's Apple Cake

Robert is a valued member of the "Ask Sarah" Message Board for Bakers. He contributed this recipe delicious recipe from his wife. This is from his wife's mother!

4 medium size red delicious apples
1/4 cup sugar
1 teaspoon cinnamon
2 teaspoons lemon juice
1 tablespoon all-purpose flour

3 large eggs
3/4 cup vegetable oil
1 cup sugar
1 teaspoon vanilla extract
2 teaspoons lemon peel from 1 large lemon

1 cup flour
2 teaspoons baking powder

1/4 to 1/3 cup brown or raw sugar for sprinkling on top of cake

1. Preheat oven to 375 degrees. Grease a 9-inch cake pan. Set aside.

2. Core, peel and dice apples and place in large bowl. Mix flour, sugar, cinnamon and lemon juice in a small bowl and sprinkle over apples. Toss. Set aside.

3. In a medium bowl, combine flour and baking powder. Make a well in the center.

In another medium bowl combine eggs, oil, sugar, vanilla and lemon peel. Whisk ingredients until smooth. Add the ingredients to the flour mixture and mix to combine.

4. Take ½ cup of apples and set aside. Mix remainder into the batter. Pour batter into pan. Sprinkle remaining apple pieces on top of batter and sprinkle with 1/4 to 1/3 cup brown or raw sugar and bake about 45 - 60 minutes. Check after 45 minutes with toothpick or cake tester until comes out clean. Let cool in pan on wire cake rack. 

5. Sprinkle top with powdered sugar. Serve cake from pan.

*Note: You can also just slice the apples, pour in half the batter, layer the apple slices on the batter and then pour over the remaining batter. If so, use a 13 x 9-inch cake pan. The oven temperature and baking time remain the same.
