Sourdough Bread Starters:
Instead
of making your own starter from
scratch, which can be a throw of the dice and isn't always stable, you can buy a
culture from a long-established vendor. A way of buying a sourdough starter that
I don't recommend is buying a dried packet of sourdough starter. If
nothing else, you don't know how long the packet's been sitting on a shelf; it
could be thoroughly dead.

Sourdoughs International

Excellent quality starters. A variety of
cultures collected from around the world. Try the RUSSIAN or BAHRANIAN
Starters. They also offer a book by Ed Wood, renowned sourdough
researcher. |

King Arthur Flour Company.
I bought my own starter from them - their Classic Sourdough Starter. They
don't have the same variety of starters as Sourdoughs International, but
their Classic Starter is from New England, a region that Sourdoughs
International doesn't have a starter from. |

 | Carl Griffith:

Send a stamped, self-addressed envelope
and you will receive a packet of Carl Griffith's Oregon Trail starter, a
family heirloom starter. This starter has a reputation as being a
reliable, good-flavoring starter. |
