DEAR FRIENDS:  I know that Christmas is a big time for baking.  From experience, I know that it is also a big time for me, as well. I answer hundreds of baking questions during this time about recipes, baking tips, how to store baked goods and on and on. I have included the answers to many of these questions throughout this website that will help you during the mad Christmas baking (and eating) rush.

LOOK for NEW Recipes !!

For best results, start your holiday baking with fresh boxes of baking soda, baking powder and yeast -- I always do ! Always hang an accurate or new oven thermometer in your oven and keep it there at all times. A lot of baking mistakes come from an inaccurate oven temperature.

Christmas cookies make wonderful gifts, and cookie baking and decorating is a special event for some families. Most baked cookies can be frozen decorated or undecorated, or you can freeze your cookie dough now for baking and decorating just before the holidays. Look for plenty of cookie recipes, below plus others !

Candy always makes a welcome gift or take-along party food, and there are so many special treats you can make for the holidays. Many recipes are steeped in tradition. For example, Bourbon balls and pralines are two of the South's most famous candies.

Whenever we make homemade candy for the holidays, I end up eating too much - oh, well ... someone has to do it !! Some recipes that we use in my house are for:

If you need help, there's always Candy 101. And, remember, NEVER make candy on a humid day because chances are the recipe won't work.

For a luscious Xmas dessert, serve Cranberry-Orange Mousse in homemade solid chocolate bowls !!

Homemade Chocolate Leaves are so pretty and easy (sort of) to make. They can be scattered all about the dessert table, decorate a frosted Fudge Cake, adorn a Chocolate Ganache Mousse or a Peppermint Cheesecake or just nibbled on for fun.
I like to make my own filled and molded chocolates in all sorts of flavors. I have included information on how to make them. Once you get the hang of it, you'll find that they make nice gifts or are great to serve when company comes.

GINGER COOKIE POPS!! Let the whole family and even the neighbors join together in this decorating party. They look like lollipops, but they're really molassesy ginger cookies, decorated as far as your imagination will take you.

When Mailing Cookies, stick to sturdy ones, such as drop, bars and brownies.

Making batches and batches of Spritz Cookies for Christmas giving are a tradition in my home. They are delicate, so I don't recommend mailing them.

Homemade Cookie Giving Tips: (Host a Cookie Swap Party )
bullet Use cookie cutters to trace patterns on heavy, bright paper to make gift tags.
bullet Stencil and decorate brown paper lunch bags to make unique gift packages.
bullet Write the recipe(s) on a homemade cards and include with your cookie gift package.
Hauser Chocolates Cookies

Baking Linzer Cookies is a Christmas tradition in my house. I have recipes for both Raspberry and Lemon !!

Almond or Oatmeal Lace Cookies are perfect to put out on a pretty platter to compliment any Christmas dessert (if you are like me, you'll be stuffed and eat them, anyway because they're so hard to resist !) 

For a fancier, yet simple presentation of the lace cookies, melt semi-sweet chocolate and spread thinly over the flat side of the baked and cooled cookie. Set aside for the chocolate to set up.
