YEASTED BATTER BREADS:

To make a batter bread, in a large bowl, first stir the ingredients vigorously with a wooden spoon. Put the dough in a pan until it rises and then bake in a hot and well-preheated oven until lightly browned and well-risen.

Batter breads are easy and flavorful yeast breads made in one bowl and beaten rather than allowed to rise and kneaded which develops the flavor and gluten. They also rely on flavorings rather than yeast for most of their flavor. The steps are:

bulletThe yeast is first dissolved in the bowl and any remaining liquid ingredients, such as eggs, honey, or milk, for example, are added.
bulletThe fat and a large portion of the flour is stirred in and beaten vigorously by hand with a wooden spoon or in an electric mixer fitted with a paddle attachment. The result will be a thick, rough, lumpy batter not stiff enough to hold its shape.
bulletThe remaining flour is slowly added until a stiff and sticky dough is formed. Beating continues for another 7 - 9 minutes until the dough is smooth and stretches whenever stirred. The stretching is caused by the gluten strands being developed, which are elastic by nature.
bulletWith a large spoon, stir the raised batter to break up large air bubbles and pour it into a greased casserole, baking pan or muffin tin. The batter is then placed in a well-greased pan and allowed to rise. Afterwards, it is baked. Batter breads take on the shape of the baking pan or casserole and come out looking flatter on top.
