After cooking the caramel to soft ball stage and removing from heat, I add the pecans and spoon onto a greased pan. I then dip the millionaires in chocolate and all seems well. The caramel is rich and chewy. But after a while (next morning in this case) the caramel millionaires have now turned into more of a chocolate covered praline. Why does the caramel start out chewy and then turn into a "praline"?
