I would keep the flowers in water overnight, apart from the cake. Right before serving, then place them on top.

For safety, make sure you use decorate with edible flowers. You can even crystallize them. A list can be found on: http://www.baking911.com/decorating_flowers_edible.htm

You idea to deocrate a cake with flowers is always a winner !!
