I think that it would be fun if you baked Mexican Chocolate cupcakes -- Mexican chocolate is a combination of chocolate, cinnamon and almond extract. Add to a chocolate cake recipe- http://www.baking911.com/recipe_cakes_chocolate_Tami's.htm- 1 tsp. almond extract and 2 tsp. ground cinnamon. Leave in the vanilla extract. Then, frost with a vanilla buttercream icing (http://www.baking911.com/recipe_cakes_buttercreamtami.htm and sprinkle red, green and yellow sprinkles on top. Or, use red hots to decorate the edge of the cupcake with. I will think of some more ideas and post them later..
