Traditionally Almond Paste is an ingredient, and marzipan is something made from almond paste. Almond paste is nothing more than almonds ground to a paste with added sugar. It can be eaten straight up, but it isn't very sweet, and the almonds they use to make the paste have a bitter edge. Marzipan is when you take almond paste and add more sugar, corn syrup or glycerin and sometimes egg whites to make a dough similar to PlayDough. It can be rolled easily or shaped into anything you like! Almond paste on its own tends to be dry and crumbly and you can't shape it easily, so marzipan is made. In a recipe you want to use pure almond paste because marzipan can have ingredients that change the ratios in a recipe, so you may not have the results you are after. Happy Baking!! Tami
