Hawaii is so beautiful. Fondant is perfect for hot, humid weather because it won't melt and keeps a cake fresh. But, when it's really humid, I have added gumpaste to it to harden more. If you are going to cut through it use a 50/50 mix of gumpaste and fondant which will make it hold up even better, but you'll have to experiment because of where you live. The crumb coat must be sticky for the Fondant to adhere to it and yours was hard. Fondant wouldn't stick to hard icing, hence falling down and tearing. Beforehand, you can apply a layer of warm and sieved apricot jam (or any) or piping gel and brush it over the crumb coat. The Fondant will stick even better. I would attach the decorations with piping gel rather than water. Because Fondant is sugar-based, water will dissolve it where you placed the water droplets.
