I know if you use any type of preservative, you MUST disclose it on the ingredient label. I know that potassium sorbate works. It is a potassium salt version of sorbic acid, a polyunsaturated fat used to inhibit mold growth. The all-time critic of food additives, Dr. Michael Jacobsen (founder of Center For Science In The Public Interest in Washington, D.C.), has given sorbic acid and its salts his highest rating, SAFE. You can order it from http://hometown.aol.com/soapsandoils/potassiumsorbate.htm There are instructions on the box on how to use it. OR, you can freeze your cookies to naturally preserve them. As they sit out while you are selling them, the cookies will thaw and be just as fresh as if you baked them that day. Good luck!!
