I would search on "cake decorating history" on any search engine -- there are bits and pieces all over the place. My favorite food historian is William Woys Weaver (see his books on: http://www.amazon.com/exec/obidos/search-handle-url/index=books&field-keywords=williM%20WOYS%20WEAVER&search-type=ss&bq=1/103-2274972-9511829) He lives in Pennsylvania and I once contacted him when I was doing some research on food history, one of my hobbies. I also met him several times at his seminars he holds at the Museum of Folk Art in New York City (perhaps another resource for you???) He was kind enough to respond and was a storehouse of information. Another good place to start with is http://www.foodreference.com/html/fcakedecorating.html.I would also contact a large decorating resource, http://www.wilton.com for historical information.
