There are some chocolate cake recipes that calls for a procedure wherein you mix all dry ingredients first, then dump all the wet ones then beat it all together for about 3mins. Won't this overmix the batter? It seems like a very quick method but I wanna know how good this recipe can be. >>>>>>>>>>>>>What you are describing is known as the dump, one-bowl or quick-mix method. The ingredients in the recipe are such that they can be mixed this way without drying its texture when baked. It's important to mix the batter for EXACTLY the length of time the recipes calls for; I always recommend setting a kitchen timer while you beat to help you keep track.
