I need to prove something to a co-worker. What is the exact reason you can not freeze cake batter. I would appreciate your help on this matter. Have a great day! >>>The leaveners, baking soda and baking powder, lose their leavening power in the freezer. I also believe that the air bubbles present in the batter from mixing and creaming also pop. They enlarge when the carbon dioxide from the leaveners plus the heat of the oven ecxpand them, causing a cake to rise.
