You can purchase Bettercream on: http://www.sugarcraft.com/catalog/misc/food.htm#better Many bakeries, especially grocery store based bakeries use whipped toppings for frostings. It's a thick liquid that is whipped onsite as needed. There are a lot of different brand names, but the one I know the best is called "Bettercream" (brand name). If you check at local cake decorating supply shops, you many be able to find it in the liquid state (kept frozen), but it is VERY expensive in my opinion. This product is a lot like the "Cool Whip" in the store. It's a non dairy product made from an amalgam of tropical oils and hydrgenated "stuff" with sugars and stabilizers. Shortening is hydrogenated also, but it doesn't come from palm kernal oil etc. You can achieve a great frosting by using heavy cream in a regular butercream recipe and really whipping some air into it. Or make the classic Italian Meringue Buttercream. http://www.baking911.com/recipe_cakes_frosting_italian_buttercream.htm It is a not-sweet, light and buttery frosting that literally melts in your mouth and goes with most all cakes. My husband's favorite is chocolate cake with It. Buttercream. He says it's like a "Suzy Q" cake. Tami Sarah has a lot of different frostings on her pages: http://www.baking911recipes.com/index_cakes_icing.htm
