I have lots of icing smoothing tips on: http://www.baking911.com/decorating_cakes_frost.htm (near bottom of the page). My favorite way is to smooth the icing is with a paper towel after the icing has crusted. This is where the iced cake sits for 15 to 20 minutes and when touched lightly with a finger, it doesn't stick. I have found that Viva brand paper towels are perfect to use because they're smooth and won't leave a pattern.
