A cake will sink for a couple of reasons. It has to do with not baking it enough, not having the right oven temperature and measuring ingredients, to name a few. In my opinion, the biggest cause of most cake problems happens when the butter and sugar are not creamed enough, and the eggs are not mixed enough after each addition, not forming a good emulsion. It holds the air bubbles, which expand from the carbion dioxide when it is released from the leaveners as the cake bakes, causing it to rise. If it can't hold air bubbles, then the cake won't rise.
