i have successfully made a basic hard candy lollipop recipe several times until recently when the sugar seems to start to 'crystallize'into almost a maple sugar candy consistency, a day or so after the product is made. it has been exceptionaly hot and humid...could that be the cause and is there any remedy? thank you.
