In the summer, if you are using a buttery recipe I would always keep it in the fridge, just because butter melts so easily your icings etc may melt and deteriorate very quickly. I would chill and then lay plastic wrap over to cover after the icing is solid. then pull before you need to allow to warm slightly before serving. Tami
