I would use the pans you have, filling each 2/3rds full. Sometimes quick breads do not bake thoroughly when placed in a bundt pan. If you can't fill the second pan, make muffins, instead. Be sure to fill the unused muffin tins 1/2 full with water so they won't smoke in the oven.
