One of my favorite buttercreams for chocolate cake is a caramel buttercream. I melt purchased caramels with some heavy cream over very low heat until smooth. Then cool until just warm, but still liquid. Make a simple buttercream with 1/2 shortening and 1/2 cup butter, vanilla and about 4 to 6 cups of powdered sugar, beat until smooth and add the caramel and mix. It's not as light as a buttercream, but it's not a heavy caramel layer. I'm not sure if this is what he wants, is it something his mother made? Tami
