Recipes are changed by everyone, so the baker who made the buns you loved may not be making them from a recipe you can find easily. I would search (www.google.com) for "German Black Bread" and "German Brown Bread" and go from there. When I did a quick search many recipes and information came up, it's a matter of sorting through the pages. From my understanding, german Black Bread is a popular bread for deli sandwiches etc, so that may be what you are after. And you can always play with the recipe to make it yours. For a sturdy bread that holds up to even liquid ingredients you will need to use a high-protein flour, like bread flour in the ingredients.
