This is tough with fresh yeast. It is crumbly so you really can't pack it into a measuring spoon very easily. One gram is a very miniscule amount. When I worked for a bakery that used fresh yeast, even the bulk buying came in one pound blocks. Each recipe was formulated to use "X" amount of one pound blocks. -----------Does the yeast readily dissolve when it hits water? You could use displaced water measuring if it holds together well. Fill a measuring cup with 1 cup water and add a piece of yeast block to the 1 1/4 cup line, you know you have 1/4 cup of yeast. It works with shortening, but you end up with wet shortening. If you want very small amounts could you use a scale? I know you wanted volume, but yeast is usually measured by weight, and dry yeast is easily measured by volume measurement. I guess what I need to know more than anything is HOW small of amounts do you need to measure? Tami
