Nutritional information changes with the weather. Eggs are bad...NO wait, they aren't really that bad. Salt is evil....no wait, it's really not. The only oil that they have definitely determined is bad is tropical oils like palm kernal and coconut, or any oil that has been chemically alterned by man (hydrogenated). And of course, all things in moderation. If you are interested in learning the truth behind government and scientific studies on nutrition I urge you to check out the "Nutrition Action Newletter" that is put out by the non-profit organization the Center for Science in the Public Interest. They bring ALL the actual studies and findings together and put it in lay terms for the "normal" people to understand. Unfortuneately with the internet there are a LOT of mis-informed people out there spreading the rumors and 'info" they receive from emails. And the newsmedia doesn't help either. I will NEVER forget the latenight call from my husband's mother (a nurse) that I MUST right NOW stop giving my children fruit juice because they will be malnourished if I continue letting them have this "evil" beverage. Well my son isn't one to actually EAT fruit, so fruit juice is the only way I have to get it in him. The next day I found out WHY she became hysterical. She watched a 10 SECOND trailer for the late night news stating that "juice is causing children to suffer from malnutrition". She immediately paniced and started calling people with small children. SO I watched the WHOLE broadcast to hear that parents who allow their children to drink and drink and drink fruit juice at a meal time can have nutritional problems. WHY? Because the children are filling their stomachs with the juice and not the nutritional food they are to be eating. Well I already didn't even let my kids drink too much WATER at a meal for the same reason. I just about FLIPPED when I heard this. She had gone into hysterical fits for nothing.-------My whole, long winded, point is that when you hear something TOTALLY off base with the info you already know be sure you personally research it at a REPUTABLE health site like the mayoclinic one that Janet mentioned. I have received the Nutrition Action newsletter for more than a year now and I have learned quite a lot about what rumors people spread erroneously through the internet/emails. SO...your canola oil is fine, in fact....the affor mentioned newsletter just did a whole section on oils with the findings to stay away from hydrogenated oils period. But to use oils like olive, canola and safflower and peanut in moderation and in balance. Meaning just don't use just one kind of oil, but small amounts of different oils. I personally use Canola for neutral saute and for baking. I use safflower JUST when I am searing meats at very high heats and I use olive mixed with butter for all other cooking. Usually 1/3 butter and 2/3 olive oil for basic saute and for my rice dishes and pasta sauces--strictly for flavor. When I do fry I use canola oil because I can't find peanut oil in larger quantities than a pint container. Good Luck! Tami http://www.cspinet.org/
